But I'll admit: Most of my pins lie somewhere between overly precious and twee. Sure, hand-painted cake balls may look like a good idea—but who has that kind of time? Also, cake balls. Most often, I put a proverbial thumbtack on a nice-looking pie, move on, and never think about it again. But one lazy Sunday morning, I came across a pin advertising eggs baked in muffin tins.
I know, I know. You're probably thinking, "That's so…Pinterest-y. But it's also a great idea. I immediately made a batch and, to my delight, they were a huge win. Although I do love a good Pinterest Fail. I like to use 2 eggs per cup and make 6 servings at a time to go through a full dozen eggs. Then, I reheat them throughout the week. Here's how to do it. Skip the paper liners—we're not actually making muffins here. I used butternut squash, but you could also go with bell peppers, tomatoes, or greens.
Whatever you use, cut it small so it cooks quickly and fits in the pan. Remove from the heat and divide the cooked vegetables between the prepared muffin cups.
Crack a dozen eggs into a mixing bowl, season with salt and pepper, and break up with a whisk, mixing as if you were going to make an omelet. Pour the eggs over each prepared cup and place in the oven. Bake until just set, about minutes, depending on your oven. You can store these in the fridge and reheat gently during the week. They're great sandwiched between a halved English muffin, or broken up with a fork, splashed with hot sauce, and used to fill up a couple of tortillas.
